I’m not a big meat eater and haven’t been for a long time, but I still like to have some sausage or a hamburger now and then.
- I think I eat red meat once or twice a week but I don’t eat a lot when I do eat it.
I am going to have three sausage links today with some eggs and toast. My grandfather used to eat sausage every single morning and he would pour the sausage grease over his grits for flavor. He was an HVAC repairman and liked to eat a big breakfast before going to work so he could work till later in the afternoon before getting hungry. I don’t pour the sausage grease on my grits when I eat them but maybe I should because it really adds flavor to the somewhat bland grits. My gramps used to bring home HVAC equipment to work on and would teach me the ins and outs of repairing them. We also did a lot of fishing as we had a house right on the lake up in the mountains of NY state. I had my own boat and boating license when I was just 8 years old. I would help my gramps carry the heavy HVAC systems into his workshop and we would sometimes spend hours in there working on them and just hanging out. I can still remember the musty smell of the workshop with the smell of old National Geographic magazines that he had in a big cabinet. He liked working on heating and cooling systems and teaching me about them.
